Whenever I find fresh, plump leeks at the vegetable store, I grab a few. Their delicate onion flavor is great in many dishes like soups, quiches, risotto, and especially in these tasty leek and potato patties – again from the fabulous Sephardic kitchen. I’m sure you’ll love them once you’ll make them.

Thanks for reposting this recipe. It looks wonderful and I hadn’t seen the original post. I make potato cakes (patties) from time to time but never thought about adding leeks. Next time I make them I’m going to add some leeks. It would make the patties more interesting and add a really nice taste dimension.
