Honey Orange Sticky Chicken Wings

With fresh citrus fruits arriving at the stores, I’ve decided it’s time for some orange flavored chicken wings.I came up with the following recipe for sticky, sweet-salty and spicy chicken wings. The dish is easy to prepare, as the chicken wings are marinated in advance, in a quick to assemble spicy orange-honey-mustard marinade. The marinade ingredients will fill your kitchen with wonderful aromas, both while preparing the dish and while roasting it.
Once the wings are almost fully roasted, a sticky glaze, made of butter, orange zest and honey, is poured on top of them and the pan is placed again in the oven for a short roasting.  This adds another layer of wonderful flavor and enhances the citrus aroma. The result is finger licking, sweet-salty, spicy and sticky wings.
Serve them with plenty of napkins and enjoy.

Prep time: 20 minutes
Roasting time: 1 hour 15 minutes
Ingredients:
1.5 lbs (700 grams) small chicken wings, split, tips removed
For the marinade:
1 Tbs orange zest
½ cup fresh orange juice (from 1 medium)
1 Tbs salt
½ tsp sweet paprika
½ tsp hot paprika
½ tsp freshly ground black pepper
1 Tbs honey (preferably orange blossom)
1 Tbs Dijon mustard
A few drops of hot sauce to taste
For the glaze:
½ stick (55 grams) butter, soft
1 Tbs orange zest
2 Tbs honey (preferably orange blossom)
½ tsp salt

1. Using paper towels, dry the chicken wings and set aside.
2. In a medium bowl, mix the marinade ingredients. Add the chicken wings and mix. Transfer to a large Ziploc bag and marinate for at least 4 hours, and up to overnight. Bring to room temperature before roasting.

3. Preheat the oven to 420F (215C). Line a roasting pan with baking paper. Arrange the chicken wings in one layer and pour the marinade on.  Roast for one hour, turning the wings occasionally.
4. In a small bowl, mix the ingredients for the glaze. Pour over the wings and place back in the oven for 15 minutes, until the wings are golden-brown and sticky. Keep in the pan for 5 minutes before serving.

      1. I like to try different kinds of honey. The one kind of honey that I found really challenging to use was buckwheat honey. After I bought a jar of it, I really struggled to find recipes that could handle its robust flavor.
