Chicken Wings with Mustard, Lemon and Thyme

Chicken wings are a favorite of mine, and I’m always looking for new ways to prepare them. This quick and easy recipe was assembled on a hot summer day, when I needed a simple dish, that didn’t require too many ingredients or cooking procedures.
First, I decided to rely mostly on Dijon mustard as my main ingredient for flavoring the wings. To that, I simply added some fresh thyme, garlic and lemon, mixed it all together, and placed it in a hot oven to roast.
I’m happy to report that even with only few ingredients, the wings came out very flavorful and aromatic. Served with a fresh green salad on the side, they made a perfect no-fuss summer lunch. Try it too and enjoy.

Makes: 2-4
Prep time: 15 minutes
Roasting time: 50-55 minutes

Ingredients:
1.75 Lbs (800 grams) small chicken wings (preferably air-chilled), divided, tips removed
½ large lemon
2 tsp salt
½ tsp freshly ground four peppers mix
2 Tbs fresh thyme, crumbled
2 garlic cloves, roughly chopped
3 Tbs Dijon mustard
½ tsp Sriracha sauce, or other hot sauce (optional)
For serving: fresh lemon wedges

1. Preheat the oven to 375F (190C). Line a roasting pan with foil and baking paper.
2. Pat dry the cut wings and place in the pan. Juice the lemon and pour over them. Cut the juiced lemon into large wedges and add them as well. Add the salt, pepper, thyme, garlic, mustard and Sriracha sauce, and mix well, to coat the wings from all sides.

3. Roast for 50-55 minutes, turning a couple of times, until the wings are golden. Serve immediately, with fresh lemon wedges on the side.

  1. Fabulous! I love that you added thyme. I have fresh in the garden, but I use dried thyme often. Especially in the fall and winter (obviously then it’s not growing in my garden!) but my point it that I love the flavor and it’s quite potent.
