Blueberry Cobbler

Cobbler is the perfect dessert for anyone who loves stewed fruit, topped with a cake-like batter. While it is British in origin, cobbler is also one of the most popular American desserts as well.
Different types of fruit, or a combination of some, can be used for the fruit layer. The topping can also vary, from thin batter (as the one I have here), to heavier ones. All these versions are similar in how quick and easy they can be prepared. Continue reading “Blueberry Cobbler”

Dairy Free Banana and Blueberries Cake

When I was asked to create a dairy free, low sugar and low fat summer cake, it was quite a challenge. I’ve decided to rely on the natural sweetness of fruit, and the first ingredient that came to my mind was ripe bananas, as their creamy texture mimics well that of butter in baked goods, and their sweetness would allow me to use less sugar in the cake. Blueberry, Lavender and Lemon Marble Cake

Buying more blueberries than needed, I decided it would be a good idea to bake a cake with them. However, I didn’t want to just add them into a cake batter, but rather, have them in a sort of separate layer in the cake.

Blueberry Nectarine Crisp with Spelt Flour and Coconut

A crisp is one of the easiest and tastiest fruit desserts. The combination of warm, juicy fruits layer, with a crispy sweet topping, is a perfect ending to a summer lunch or dinner.
In the version I have for you here, I used spelt flour instead of white flour, and mixed it with rolled oats and shredded coconut, along with butter and warm spices. Continue reading “Blueberry Nectarine Crisp with Spelt Flour and Coconut”

Banana, Blueberries and Coconut Cake

With abundance of fresh berries, I find myself buying more than needed, and, as they don’t keep well, I try to find ways to use them in baking. I often also have some overripe bananas around, so I’ve decided to combine both in the form of a tasty cake. Continue reading “Banana, Blueberries and Coconut Cake”
