“Sofrito” means “fried” in Ladino (a Jewish version of Spanish); a term that is often used in the Sephardic cuisine, to describe not only the process of simple frying, but also to describe a specific dish, that combines meat and potatoes.

The Jewish New Year is celebrated today, and this brings back memories of traditional foods.
